It's that time of the year.


I'm not canning as much as I did last year. Last year I over did it I think. I still have 2 pints of zucchini relish, 3, 1/2 pint jars of rhubarb/pineapple jam and 9 pints of salsa and I'm on my last quart of pickles.
I made these 5 qt of pickles tonight. The 2 on the left have some jalapenos in them so they will be spicy (hot) The one in the middle and the one on the far right are just plain old dill pickles. The one 2nd to the right, I tossed in some pickling spice just to see how that would be. We will see.
Yesterday I made 3 pints of pickled beets. Not near enough for me. I want to make a case of them. I will have to get more beets as the farmers market on Wednesday and make 9 more pints. Just so you know, I make a mean pickled beet. Sweet and spicy. I must like the taste of sweet, spicy dirt!
I have lots of zucchini that I will shred and freeze them. I have not tried that before but a few people have told me that it works good.
I was looking at my garden. No beans yet. I have some nice looking tomatoes but they are still green. I will cut the stems that have no flowers so that the plant will start putting more energy into the existing ones.

Are you all into canning and such? What have you put up so far this year?

  1. Only the cherry jam so far. Although I have been making fresh salsa on our mexican food nights and that has been yummy.

  2. I have never done any canning myself but Nanny, did mean peaches and apricots. Her husband was diabetic so she canned them in water - no suger. You would never know it when it came time to dive in and devour them... They were yummy! Her jams and jellies were out of this world. Not sure what she did about sugar for them. I will check to see if my sister can get the step-granddaughter to share the recipes.

    She also did a lot of freezing. it was wonderful to go visit and find goodies in the freezer and panty.

  3. I don't do any canning. I just let other people give me stuff that they canned and I enjoy it. I did make fireweed blossom honey one time. What a pain. And I canned moose meat with you once. That's it.

  4. Wow! That is a little amount of canning for you? I have only dont one batch of raspberry freezer jam. Last year I did a lot of strawberry jam and peaches. I really want to do peaches this year but need to find some good Freestone. I LOVE pickled beets! Do you make sweet pickles?

    I would think that Zucchini would turn really soggy when thawed?

  5. Homemade pickles are the best! I used to love filling the jars for my mom when I was little. I think one of the best summer smells is dill.

    Beets sound good. I like pickled beets on salad. I have never made them however, I was always a little worried about all that red color staining stuff.
