And a good time was had by all.

The preacher, his wife and a kid (Not their kid, just a kid from a troubled home, about 19 years old? ) that has moved in with them came over for dinner. We had a good time. I pulled out some of my old cabin pictures and showed them that. I also ended up having to get a map out of the state of AK so he could show me places he has been to. Also he wanted to see on the map where my cabin was at.

For dinner I made Halibut, boiled red potatos with butter and dill and green beans done up with bacon, shallots and garlic. I didn't get a chance to take any pictures of anything. But it really did look nice and it really did smell good.

How I like my halibut. Use about 2lbs of fish and cut up into bite size chunks. Make a mixture of 1 cup mayo, 1Tbls horseradish and 1Tbls dill. ( I don't measure so I'm guesstimating what I used ) Dump that on the fish and stir it all around so that the fish is well coated. Then I put about 1 cup of cracker crumbs on top, melt about 1/4 cup butter and 1Tbls lemon juice and spoon that on top of the cracker crumbs. Bake at 375 for about 45 min or till it's brown and crunchy on top and bubbly. Oh, I sometimes put about 1/2 cup cheese on before I put on the cracker crumbs.

I was going to make Apple Crisp for dessert but I could not find any Granny Smith apples. So I got some red apples. When I went to cut them up they were mealy and dry and yucky. So that was out. I had bought a lemon to keep the apples from going brown so I made a Lemon Pudding cake instead.

I had no leftovers. They all had 2nds and 3rds so clean up was easy!

It was nice to have company over. I think that I need to do this more often. In fact, I think that I will make an effort to have company over once a month.

For those wanting to know about going back to school. I will wear what I wear all the other times. Pants and shirts. No style.

  1. I bet it was fun to cook for guests tonight. Ahhhh, that halibut must have been delicious. My mouth is watering right now.

  2. We had halibut last Sunday made by Patti. It was delicious. She puts a slice of swiss cheese on each serving of halibut, covers that with a sour cream/mayo mixture, then crunched triskets w/melted butter on top. Bake and then broil the top so it's crunchy. It was really good. I never thought of using swiss cheese but it was really complimentary to the halibut.
