This morning while I was getting ready for work I saw my two apples still sitting on the counter top. ( I really have a hard time eating fruit! they have been there for weeks!) I told myself that I needed to make something and use up one apple. So I decided to make Chicken Curry. I got the recipe from my friend Ruth up in AK.
Here is the recipe.
Heat oil in frying pan and add 1T of curry powder and heat for 1minute or so. Add two chicken breast cut up into bite size pieces. Cook thoroughly. Add 1 cup chicken broth and 1/2 cup onion chopped finely. Cover and cook 10 min or so. Add 1 granny smith apple cut into bite size pieces. Stir in 1T of cornstarch into 1/4 cup cold water. Add to frying pan. Cook until thickened to your desired consistency. Serve on rice. Condiments include raisins or dried cranberries or coconut and shaved almonds.
I didn't do that. I rarely follow recipes. (Unless baking )
I used 2 good glugs of oil, got that hot, added 2TBLS of curry, heated that up and added the chicken. Before the chicken was halfway done I added the onion and cooked that for a bit then added 1 can of chicken broth ( I held back about 1/4 cup to mix with the cornstarch) added the apple and 2 good handfuls of dried cranberries. Put the lid on it and let it simmer for about 15 min. Then added the 1/4 cup chicken broth/cornstarch to the mix. I also added some garlic.
I tasted it. It was missing a little something. ( This is where my friend Ruth would add, grape jam or some garlic BBQ sauce, maybe peach yogurt that's almost gone bad, she will add anything!)
I looked in the fridge and there it was. I have made some pear chutney a while back and I had a jar of that. So I added a 2 big spoonfuls to the curry, It became just right. Put that all on some brown rice and topped it off with some coconut.
I think that any kind of chutney would work. Maybe some pineapple?
My dad would hate hate this dish!
Now my house smells like curry. Right now that's not bad. Tomorrow It will probably get on my nerves.

ReplyDeleteWell the smell part reminds me of when you lived in the upper apartment on Lake Hood and your downstairs neighbor was from the Middle East - you would get heartburn just from the strong cooking odors rising up to your apartment!!!
