I don't know why but on Mondays I start to think about what I will bring to the potluck that we have at Church after service. This week I thought about it but I didn't figure it out till I was at the store yesterday. I had a plan. The plan depended on if I could find fresh rosemary. I had a back up plan but I was able to stick to the 1st plan.
I made roasted potatoes with fresh rosemary. And other stuff.
The other stuff was red bell pepper, shallots, green beans and garlic.
2lbs of potatoes cut up (or 3 lbs )
2 big hand fulls of fresh green beans cleaned and cut up into 1 inch bites.
1 red bell pepper cut into, you guessed it, bite size pieces.
4 or 5 cloves of garlic, more or less, depends on how you like garlic, chopped fine
2 or 3 sprigs of fresh rosemary chopped fine ( about 1 or 2 TBS )
2 or 3 shallots chopped fine.
Add it all together and add about 2 or 3 good glugs of olive oil ( 1/4 cup? ) salt and pepper
Roast at 400 for about 15 to 20 minutes stirring every once in a while so they don't burn.Bring the heat down to 300 and roast till done. About another 15 to 20 minutes. When done
put about 1/4 cup balsamic vinegar in it and mix it all up.
I like to serve it warm but not piping hot out of the oven. Also sometimes I will add a splash of olive oil with the vinegar to get that fresh flavor of the oil.
This was pretty big pan and being that there was no cheese in it, I was worried how it would go over. Well, I'm happy to say it went over real well. I was asked by a few for the recipe and I had a empty pan to take home.

ReplyDeleteLooks good. I like to make red pot. in the oven like that with rosemary. I coat the pan with olive oil and the pot. too and they get nice and crispy. That's the way my hubby likes them, crispy. Glad our dish went over well. It must be kind of a challenge to figure out what to bring each week.
ReplyDeleteYum Yum - looks good!!! Did I tell you I tried cooking asparagus in oven like Pioneer Woman's recipie - it really turned out good - think will start doing it that way instead of steaming...
ReplyDeleteTaylor and i have been making lots of stir fry lately. I love it with LOTS of cabbage. Instead of dealing with whole ginger root, found where you can get it minced in a tube - works slick and sure adds good flavor.
Oh did we get over a foot of wonderful wet snow Thursday (quite the storm!!)and it's melting fast - hopefully will get lots more so we can avoid a drought!!!
