Slaving over a hot stove

Well today I made 24 pints of the "Best Salsa Ever!" I made 3 batches and each batch is a little bit different, well one batch is really different! So maybe its not the "Best Salsa Ever" now. The 1st batch I followed the recipe but the peppers that I had were not hot enough so I would rate the 1st batch as "very warm" not hot , maybe to hot for my sister Patty in Alaska as she does not like spicy food. The 2nd batch is a little hotter and I also added chipotle in adobo sauce so it had a different taste, if you like chipotles then you would like this. The 3rd batch is hot, but not over hot, I think its almost just right. I had separated the peppers into 3 batch's so that they would be the same hot factor but when I found out that they were not hot enough, I had to barrow from the others. The last batch I added 4TBLS of fire oil ( chili oil from Asia ) that did kick it up a notch! I started this all at 7am and got done a little after 1pm, That was from starting the stove to blanching the tomatoes and putting the last dish away, as I believe that you're not done till you clean up. My fingers burned for a few hours after! I cut up a lot of peppers and I was smart and did not rub my eyes! but I did pick my nose and that hurt! Having a burning nostril is not a "fun" thing, just a FYI!

  1. Excuse me everyone, you may not want to hear this, but one time after cutting up these really HOT peppers, I went into the bathroom and had to change my tampon....bad, bad idea. Need I say more??????

  2. Ow!!!! That leaves me feeling a little woozy.

    Kris - Tim states that he would prefer a jar of salsa that was not involved in the nose picking episode. Just an fyi.
