When I lived up in AK and at my old job I made a trade with a coworker. I traded for smoked fish. That was a year ago. I was sure that I was all forgotten ( out of sight, out of mind ) but he came through! Today by FedEx, I got a package of this! I'm in heaven! I also feel a little sick as I have ate 1/2 of a package so far. It's hard to stop. Smoked salmon is my crack!
This is native style smoked fish. It's called strips. The fillets are cut into long strips and then cold smoked for a few days. It's very oily, smokey and yes, it's fishy. But all in a good way. I remember a time when I lived in Dillingham AK and at work somebody gave up some strips and we were all eating it and some tourist came in and looked around and finally asked us what that real smokey fish smell was. We told them and offered them some but they were chicken and didn't even try it. Their loss, our gain.

I remember eating "squaw candy" when I was a kid. I was the BEST stuff ever. My dad made really great smoked salmon - I prefered the thin pieces!

Wow. The salmon we get out of Lake Michigan sure isn't that red....any idea what kind of salmon that is?

I like smoked salmon but haven't had an in a long time. Last time I had it at a party. They served it on little rye toast with somekind of creme cheese spread and capers on top. It was good.
ReplyDeleteThe fish are silver salmon. Also known as a coho salmon. Maybe they are so red as they are ocean run for a few years before the go up river? (And wild salmom)

Straight out of high school our son was crab fishing on the "Alliance" ... he brought us back crab.All kinds of crab.. so much that we finally over dosed on it and haven't ate much ever since. He's been off that boat for 14 years...

I have an aunt and uncle who have been living in Alaska for over 20 years. When they first arrived, they got into the canning and smoking of salmon and they'd ship the stuff down to us. I was okay with the canned salmon (with white sauce..mmmmm..) but the smoked salmon was to die for! It was delicious! I'll never forget going to a resturant in my area and asking for smoked salmon. It wasn't the same at all! To this day I occasionally crave it, but my uncle and aunt don't can or smoke salmon any more. :o( Hope you enjoy it!
