So I have pie coming out my ears. Well, not yet. They are cooling on the counter top. The 1st pie I made was the Chocolate pie. This is not a healthy pie. It's a good pie. And maybe it's not really a pie. What makes pie a pie? Being that I called it a pie, it's a pie!
This pie calls for 1lb of Semi Sweet Chocolate.
1 lbs of butter ( 4 sticks ).
1 cup sugar.
1 cup water.
8 eggs. Yes the pic shows 10 eggs but that's wrong. It's 8 eggs.
Melt Chocolate, butter, sugar and water over low heat. Until sugar is dissolved. Beat the 8 eggs in a separate bowl. ( I get those icky white things that are stuck to the yolks out because the thought of them makes my sisters gag!)Temper the melted chocolate mixture into the beaten eggs. Pour into a greased 9in x 3in spring form pan. ( My spring form pan does not fit tight. I line with foil ) Bake in a 350 preheated oven for 40 -45 minutes. Or until a wooden stick comes out clean. Let cool and then place in fridge for 4 hours before cutting.
And then I made a Lemon Meringue Pie. It's just your basic pie. But it is one of my favorite pies. I remember as a little girl I would eat the meringue first and then would be too full from that to eat the lemon pie part.
The top of this pie is all most over perfect. It's not burnt, but getting really close! I will have a piece of this one 1st. It's almost ready to be cut now.
This pic took a long time to load so I has a slice of it. It was good, If I do say so myself! Not burnt at all.
