What a great day today here in Wisconsin. I got up early and got a start on my day. Oh, don't be thinking that I did chores cause I didn't, unless you count sitting on the back deck with the sun umbrella and reading Dean Koontz latest book " Relentless" as a chore.
I had my friend Kellie and her husband over for dinner tonight. I like having friends over. I enjoy cooking and when I just cook for myself I end up doing something boring and simple.
I made Chicken Yassa, green beans with bacon and onions and fruit salad. ( Suzy1, I think I ate 2 servings of fruit today! )
I learned of Chicken Yassa up in Anchorage a few years ago. Anchorage has a Saturday market and there are some food booths. One year there was an booth that advertised African food. I had this Chicken dish and I thought that it a great new way to do chicken. I googled it and kind of made up my own recipe.
Marinate chicken in the following for 6 to 8 hours
3 or 4 onions sliced
1 cup red vinegar
1 cup lime and lemon juice (I use more lime then lemon )
1/4 cup oil ( any kind, I use corn....I think)
2 bay leaves
3 cloves garlic minced
1 jalapeno (or more, I do more as I like spicy )
2 tbls brown sugar
After marinating, take chicken out of marinade and grill chicken till nice and brown and almost done. While chicken is grilling, take the onions out of the marinade and brown them in a little oil in a oven proof skillet. ( Really, brown all but the liquid and don't forget to toss the bay leaves )
When onions are done, put the marinade into the skillet and bring to a boil and scrape up all the little brown bits. Set aside. Get the chicken off the grill and place it in the skillet with all the onions and stuff. Place in the oven and bake for 1 hour at 350. Serve with rice. The onions will almost dissolve and make a tangy gravy and the chicken falls off the bone. It does take a little time with cooking the chicken 2 times but it's worth it I think.

That sounds super yummy. On the goat pen, I think you should do your sliding door on the inside. You can always call the goats in with food, and then once they are in, shut the door. If you have it outside, in the winter you will have to go through snow and cold to shut the door. Just my opinion.
