I don't know what to do with my over abundance of cherry/plum/grape/pear tomatoes! This bowl is a 2 day harvest of them, I have O.D. I cut about 30 of them in half, mixed them up with some fresh basil and tossed them with some olive oil,balsamic vinegar,salt and pepper and slow roasted them and then put all that in the food processor with some fresh garlic and made a pasta sauce, it was OK, not bad, but I don't want that every night for dinner. And I see that I have about another 100 getting ripe as I type. I am going to start have dreams of giant cherry tomatoes chasing me and telling me "eat me!" Oh the horror of it all! (As she puts a hand to to brow and swoons!)

That is a LOT of tomatoes. Can't you make and can salsa, ketchup, spaghetti sauce, and whatever else you make out of tomatoes? I would think salsa would be nice.

I have thought about salsa, but I like fresh salsa, not canned ans with that many tomatoes I would have to can some of it. I do plan on having fresh salsa tonight, and some avacado

ReplyDeleteupon looking closer of that pic of the bowl of tomatoes it occured to me that you could play with those yellow ones. They kinda look like "weeble wobbles" but they don't fall down.
ReplyDeleteHow about sending some jarred salsa to us poor Alaskan's that have had a HARD, COLD summer. :) I would love to recieve a jar of Krissy salsa, tomato sauce, whole tomatoes. You could start a business.

a bag of Bowtie pasta cooked and cooled
4 green onions chopped
1 clove of garlic
all the grape tomatoes you want!
a package of HERB AND GARLIC FLAVORED fetta cheese
one stick celery chopped
fresh cilantro
olive oil or dressing to taste.
It is delish!
My mouth is watering for some of those tomatoes!!
